ในการดูว่าเมล็ดกาแฟ ว่าเป็นการคั่วระดับใดนั้น ก็คือว่าเป็นปัญหาอีกอย่างหนึ่ง เนื่องจากบางครั้ง การดูด้วยสายตา ก็มีบรรทัดฐานที่แตกต่างกัน การชิม หรือการดูด้วยสายตา บางครั้งกาแฟคั่วกลางของคนหนึ่ง ก็อาจจะเป็นกาแฟคั่วเข้มของอีกคนหนึ่ง เหตุการแบบนี้ ก็สามารถเกิดขึ้นได้บ่อย ๆ

ลักษณะกายภาพของเมล็ดกาแฟ ก่อนนำไปคั่ว
กาแฟ มีผลลักษณะคล้าย ๆ เชอร์รี่ มีเมล็ดอยู่ข้างใน ส่วนที่นำมาใช้ทำกาแฟ ก็จะคือเมล็ดข้างใน ผ่านกรรมวิธี ที่เรียกกว่า Process ซึ่งมีหลายวิธี หลายขั้นตอน
หลังจากนั้น ก็จะได้สารกาแฟ หรือที่คนในวงการกาแฟ เรียกกันว่า Green Beans หรือเมล็ดเขียว ที่มีลักษณะสีเขียวอ่อน อาจจะมีกลิ่นออกเขียว ๆ และหลังจากนี้ ก็จะนำไปคั่วได้
เมล็ดกาแฟคั่วอ่อน
เมล็ดกาแฟคั่วอ่อน มีลักษณะเป็นสีน้ำตาลอ่อน ดูมีความแห้ง เพราะว่า ยังไม่มีน้ำมันจากการคั่ว ออกมาเคลือบผิวเมล็ดกาแฟ บางครั้งอาจจะมองเห็นผิวของเปลือกกาแฟ (Silver Skin) ที่เป็นเศษอยู่ได้บ้าง การคั่วอ่อน ถือว่าเป็นระดับการคั่ว ที่เก็บความเป็นธรรมชาติของกาแฟประเภทนั้น ๆ ได้สูงที่สุด ซึ่งแสดงความเป็นลักษณะของกาแฟชนิดนั้น ๆ ได้ดี
กาแฟที่ดี มักจะนิยมคั่วในระดับอ่อน เพื่อให้แสดงศักยภาพของกาแฟชนิดนั้น ได้เป็นอย่างดี มีรสเด่นไปทางเปรี้ยว มีความขมน้อย เมล็ดคั่วอ่อน เหมาะกับการชงกาแฟด้วยวิธี Slow bar เช่น การ Drip และนิยมดื่มเป็นกาแฟดำ เพื่อที่จะดึงจุดเด่น คุณลักษณะ ของกาแฟนั้น ๆ ออกมาได้แบบชัดเจน ซึ่งเมล็ดกาแฟคั่วอ่อน เป็นระดับการคั่วที่คอกาแฟหลาย ๆ คนติดใจ แต่กับอีกหลายคนก็ เรียกได้ว่า ไม่ถูกจริต และส่ายหน้ากันเลยทีเดียว
รสชาติที่ได้จากกาแฟคั่วอ่อน
เมล็ดกาแฟจะมี High Acidity หรือรสชาติติดเปรี้ยว และความเฉพาะเมล็ดกาแฟนั้น ๆ ตามมา เช่น มีรสชาติคล้าย ๆ ผลไม้ (Fruity like) หรือมีความคล้ายดอกไม้ (Floral like) ซึ่งกาแฟที่มีรสชาติแบบนี้ มักจะพบได้จากทวีปแอฟริกา เช่น กาแฟจากประเทศ Ethiopia หรืออาจจะเป็นกาแฟโทนช็อคโกแลต คาราเมล น้ำตาลทรายแดง
ซึ่งกาแฟแบบนี้ จะพบได้จากกาแฟที่มาจากประเทศบราซิล หรือกาแฟจากแถบภาคเหนือของไทย ก็สามารถพบรถชาติแบบนี้ได่เช่นเดียวกัน ซึ่งกาแฟที่มีการเพาะปลูก และมีขั้นตอนการคั่วที่ดี พิถีพิถัน จะได้ทั้งรสชาติที่มีความสะอาด มีความเปรี้ยวที่ดี พึงประสงค์ แต่ในทางกลับกัน ถ้าหากเป็นกาแฟที่คุณภาพไม่ดี ความไม่ดีของกาแฟ ก็จะฟ้องออกมาได้อย่างง่ายดาย และชัดเจนเช่นเดียวกัน จากการคั่วแบบนี้
วิธีการคั่วเมล็ดกาแฟให้ได้ระดับคั่วอ่อน
หลังจากที่ได้เตรียมสารกาแฟ นักคั่ว (Roaster) จะเริ่มทำการวอร์มเครื่องกาแฟ ให้ได้อุณหภูมิตามที่ต้องการ ประมาณ 190 – 210 องศาเซลเซียส หลังจากนั้น จะนำสารกาแฟใส่ลงไปในเครื่องคั่ว จะเรียกกันว่า Charging Point หรือ Charging Temperature เครื่องคั่วกาแฟจะหมุน เพื่อให้เมล็ดกาแฟทุกเมล็ดได้รับความร้อน ที่สม่ำเสมอกัน แล้วกาแฟจะเปลี่ยนสีจากสีเขียว เป็นสีเหลืองอ่อน ๆ ซึ่งหมายความว่า ความชื้นในเมล็ดกาแฟได้หายไปแล้ว และผิว หรือเปลือกกาแฟ จะเริ่มค่อย ๆ ร่อนออก เรียกกันว่า Silver Skin หลังจากนั้น สิ่งที่ต้องใส่ใจเป็นพิเศษ คือ รอฟังเสียงแตกตัวของเมล็ดกาแฟ
การแตกตัว First Crack หรือการแตกตัวครั้งแรก เป็นสิ่งที่บอกว่า เมล็ดกาแฟเข้าสู่ระดับ Cinnamon Roast สามารถนำมาชงดื่มได้ แต่ในระดับนี้กาแฟจะยังคงเปรี้ยวอยู่มาก จึงต้องคั่วกันต่ออีกนิด เรียกว่าการ Develop เพื่อลดความเปรี้ยว และได้ความหวานที่มากขึ้น จนกลายเป็นระดับคั่วอ่อน ซึ่งหลังจากนี้จะคั่วอีกนานเท่าไหร่ หรือใช้ความร้อนแค่ไหน ก็จะแล้วเเต่นักคั่วแต่ละท่าน แต่ถ้านานไปก็อาจจะกลายเป็นระดับคั่วกลาง
สำหรับหลาย ๆ คนที่สงสัยว่า กาแฟนั้นจะหวานขึ้นได้อย่างไร จากการคั่ว ก็คือสารกาแฟจะมีส่วนประกอบของโปรตีน และแป้ง เมื่อได้รับความร้อน จะเกิดปฏิกิริยา ที่เรียกกันว่า Caramelization ทำให้แป้ง และน้ำตาลแตกตัว ความเปรี้ยวจึงเปลี่ยนเป็นความหวาน
เมล็ดกาแฟคั่วกลาง
เมล็ดกาแฟแบบคั่วกลาง อาจเรียกกันได้อีกอย่างว่า City Roast อาจจะพัฒนาเป็น Full City ได้ ถือว่าเป็นที่นิยมสำหรับร้านกาแฟสมัยใหม่ เพราะมีความ Balance สูง ถ้าคั่วได้ดี จะมีความเปรี้ยว และหวานแบบพอดี ๆ และยังไม่มีความขม (Bitter) ที่มากจนเกินไป ลักษณะภายนอกจะมีสีน้ำตาล ที่เข้มกว่าระดับคั่วอ่อน ผิวหน้าของกาแฟมีความแห้ง แต่ยังคงความธรรมชาติ และเอกลักษณ์ของเมล็ดกาแฟนั้น ๆ ไว้ได้ดีอยู่ และมีความหวานจากการ Develop เหมาะสำหรับการชงเอสเพรสโซ หรือการชงแบบใช้ Syphon, French Press, Moka Pot, Aeropressและการดริป ก็ทำได้เช่นเดียวกัน

กาแฟคั่วกลา โดดเด่นเรื่องความ Balance มีความเปรี้ยวที่เป็นธรรมชาติ และความหวานจากการ Caramelization แต่ในขณะเดียวกัน ก็ยังมีความขมที่พอดี ให้รสชาติ และลักษณะเด่นของกาแฟชนิดนั้น ๆ ได้ความเข้ม และหวานที่มากขึ้นกว่ากาแฟคั่วอ่อน
วิธีการคั่วให้ได้กาแฟระดับคั่วกลาง
หลังจากที่คั่วถึงระดับคั่วอ่อนแล้ว นักคั่วจะยืดเวลาการคั่วต่อไปเพื่อให้ได้ความหวานที่มากขึ้น ความเปรี้ยวจะหายไป มีการ Caramelize จนเมล็ดกลายเป็นเมล็ดสีน้ำตาล หรือน้ำตาลเข้ม ส่วนมากการคั่วระดับคั่วกลางจะหยุดก่อนได้ยินเสียงแตกตัวของเมล็ดกาแฟครั้งที่สอง ซึ่งการคั่วระดับคั่วกลางมักจะเป็นปัญหา เพราะเป็นการคาบเกี่ยวระหว่าง คั่วอ่อน และคั่วเข้ม การคั่วกาแฟระดับคั่วกลาง จึงหมายถึงการผ่านการคั่วระดับคั่วอ่อน มาแล้ว และจบการคั่วก่อนถึง Second Crack

Unfortunately, an accident has a devastating effect on an ambitious prosecutor with the mind of a child
The Good Bad Mother explores the complicated relationship between a mother and her son. Young Soon, a pig farmer, pushed Kang-ho to his limits so to ensure that he didn’t end up as her husband. The effort paid off. Her son, who is a prosecutor who had a bad attitude to her, made a name for himself in the process.
Despite his success, Kang-ho’s mind is still that of one of the children. His lack of mental maturity and emotional intelligence can cause him to get into trouble at work, and the prosecution office refuses to offer him trial evidence because they feel he’s not competent for the position.
The script on this show is fantastic- no character is relegated to the typical archetypes of K-drama, and it feels like a refreshing experience to get involved in the characters you would never be able to in real life. It is adept at navigating switch between funny and tragic ones. The shift in the tone is never uncomfortable to the viewers.
Young-soon (Ra Mi-ran) and Kang-ho (Lee Do-hyun) take on a trip to heal their relationship
Lee Do-hyun (who captivated the audience with The Glory on Netflix, has returned with another touching story about the bond between parents. Ra Mi-ran is a young farmer of pigs Young-soon and she wants to make her son Kangho an attorney. This is achieved by giving her son Kangho a better education.
She robs him, however they are deprived of the motherly love she needs, which strains their connection. If tragedy strikes, and the man loses memory it is then that he reverts back to his 7-year-old self.
Young-soon along with him begin the journey to rebuild their friendship. The viewers will be moved by the story of these two characters when they are afflicted with a variety of losses.

Kang-ho struggles in obtaining the trial papers for his father. Although he’s a probationary judicial officer, officials refuse to give him access since he is not a part of the trial. Meanwhile, Mi-joo is grappling over her feelings towards Kang-ho, as he casually talks to her over drinks. She is annoyed, and she warns him to stay far from her.
While waiting, a fisherman finds a dead infant and yellow-white stripes bag washed up at the shore. Next day, the mother of the child arrives to retrieve her baby. This puts Kang-ho’s plan in jeopardy as the deadline for filing his father’s trial is due to expire shortly. He’s eager to take revenge regardless of the fact that Young-soon has warned him of the risks. In a letter sent to the mother of his son, he explains that the revenge he took was not intended for him but rather for her.
